Seeking Neopolitan pizza in my backyard
« on: July 20, 2011, 01:51:06 PM »
That's right. Is it possible to create good Naples-style pizza in my backyard? We have a wonderful pizza restaurant called Punch here where I live that is certified by an Italian organization as Pizza Vera Napolitana and it is fantastic.  I'd love to be able to make that at home.

Depending on how gung-ho you are about this you can indeed achieve something as good, if not better, than Punch at your house. The key is finding the adequate intensity and distribution of heat. Many members here achieve this with a wide range of contraptions, from modifications to their home oven, to souped up charcoal grills, to wood-fired oven facsimiles, to actual wood-fired ovens imported from Naples. But it is not only about the oven; it is also about the ingredients and technique. You face many challenges and will be amply rewarded if you have the motivation. There is an entire forum here:

pretty much dedicated to this quests. Start there.
