I was thinking about opening a shop so I got a job at a restaurant that i really liked. I worked their part-time for a little less than a year before i decided to scale back a bit and start a Mobile WFO operation. I've been in the mobile business about a year and am almost ready to get another oven.
I agree....get a job at a pizzeria even if the wage is crap. You will learn a ton....and take tons of notes...I would go home at night and write down all of my experiences throughout the shift...what I thought was good and what I thought was not so good.
