Ancient Chinese Secret...????

...a co-worker sent me this question this evening ..thought it would make great conversation here in pizza land.....


Years ago, my cousin made the most amazing Chicago deep dish style pizza and served it with a fine local California brew. He entrusted me with his secret sauce ingredient......

HINT #1--The secret ingredient is not something you would find in an Italian kitchen.

HINT #2 (PART A)--My cousin's ex-wife and current wife are both Chinese.

HINT #2 (PART B)--The ingredient is not something you would find in a typical Chinese restaurant.



...any ideas ?

Fish Sauce...or maybe XO Sauce?

By "typical" Chinese restaurant I am inferring you mean the on-menu items at most Chinese joints which are really Chinese-American food (in much the same vein as many "Mexican" places are really Tex-Mex and many "Italian" restaurants are the typical red-sauce Italian-American slop houses).

At least in the DC area, some Chinese restaurants have virtually an entire menu not even listed which is geared towards Chinese people. A common ingredient used on that menu is Fish Sauce or XO Sauce
