My candidate for the "all-natural dough conditioner" is high heat process non-fat dry milk. That's what's in the Laura Brody dough relaxer for improving "rollability". The non-fat dry milk has to be high-heat process. It can't be ordinary dry milk, which apparently has a protein or enzyme in it that impairs fermentation.
