Hello - Pizza Questions

Hello.  My name is Jim McAndrews.  I am looking at a Mobile Pizza operation.  Does any members have experience with mobile set ups and is any one using shredded Pepperoni on Pies ?

Shredded or diced pepperoni? I can only remember seeing shredded pepperoni once in my life - at a place in Seattle.
