cordierite can be scratched by steel brush ?
« on: August 23, 2011, 07:24:22 PM »
Hi,

I am looking at getting a cordierite stone, I presently use clay quarry tile
which is pretty hard and is not scratched by my stiff steel brush which I use for cleaning off
any toppings/cheese etc that has spilled off the pie.

Can cordierite withstand scratching likewise ?
thx

L

I have a corderite stone from Williams and Sonoma, and a coredite kiln shelf - both are pretty hard.  I use a stainless steel brush to brush off the cornmeal when it is in use on the grill between pies, and  I use an old butcher style knife to clean off burnt on junk and haven't noticed any scratches .  It isn't a very smooth glossy surface to begin with, so not sure scratches would have any impact.
