My name is Tom and I live in Atlanta. Born in Chicago, I'm addicted to Lou Melnati's pizza and continue to search for one in the south..but it ain't happening down here. For the past 20 years my father and I have been working on replicating Melnati's world famous pie. (and we're very close!)
We've experimented with oils, flours, yeast varieties, temperatures, proofing, and have finally got it dialed in.....almost.
My father is 95% satisfied yet I'm still searching for the right crust/bone texture, consistency and flavor.
I'm glad I found a group of pizza enthusiasts where I can learn from the pro's what we may be doing wrong, and share my triumphs (and failures) along the way.
