Mr. Colombo's Garlic & Wine Pizza Sauce Recipe
« on: June 20, 2005, 10:01:36 PM »
I just figured I'd share this recipe with you guys.  I emailed Escalon quite some time ago (I'm guessing it was in April) asking them for a sauce recipe that had red wine in it.  I've said this before but one of the best pizza sauces I have had had red wine in it.  Anyway, I finally got a reply today and this is what they said:

 "Hi Nathan,

Thank you for your interest in our Escalon Products.  I'm sorry it has taken so long to respond.  Our system had some bugs in it.

Regarding a recipe for pizza sauce with wine, try this one.

Mr. Colombo's Garlic & Wine Pizza Sauce

1 can Bonta 1.09 Puree
1 can 6 in 1 Ground Tomatoes
1 can water
12 oz red wine
3/4 oz fresh basil
1/4 oz fresh oregano
3/4 oz black pepper
1 oz fresh pureed garlic
1/4 oz tarragon
1 oz salt

Combine all ingredients in a large pot and simmer for at least 15 minutes to let flavors blend.  Serve over you favorite pasta.

*As with any wine recipe, always use a good wine you would drink, since the flavor concentrates as you cook it."

I don't know where the "Serve over you favorite pasta" came from since it says pizza sauce in the name.  Also, they don't specify what size cans but I'm assuming they're talking about #10's.

I haven't tried it yet but plan to.  If you try it out please let me know what you think.
"Pizza with pineapples?  That's a cake."
