Airy and Chewy Pizza Rim
« on: July 08, 2005, 01:59:09 AM »
Hello To All;
I make an excellent crust except for the rim.  It is more breadlike than airy and chewy.  Is there a New York type dough recipe out there (with mixing directions) that will allow me some success on making pizza with a decent pizza rim?  Thanks much...

I agree with Scott - try the Lehmann dough. On the New York Style topic area, Pete-zza has several versions of this dough made w/wo starter, room temp rise, cool temp rise, and ingredient amounts for different sizes of pies.
