First Try

Here is a pix of my very first pizza in my new WFO, using 00 flour and a screaming hot oven, cooked in about 75 sec, amazing, but I have a lot to learn.  :chef:

To be honest, the pizza was far from perfect, and have questions about the cheese. I used fresh buffalo mozzarella, purchased form Whole foods. I didn't use too much, but there was still considerable water on the surface of the pizza when I pulled it. Did I use too much? The wrong type? Or is this completely normal, and i just need to to rest a few minutes until the cheese firms up a bit (which it did)?

Congrats on the new oven!
As for the cheese, try wrapping it in some paper towels for a couple hours before using. I do this with good results.

Nice first effort. I dry this sort of cheese on paper towels before using.

Bill, Thanks much, we are just finishing up our "Tuscan"  whole house remodel, the inside kitchen isn't even done, but I had to cure and try out the WFO. I can't wait to roast a small pig or lamb in it.

dale, pizza looks really good .I'm sure you already know this but that beautiful first pie will hook you for life. more pics please!!! buffalo can be a little wetter as the fat content is so high. as don said drying it helps.it also cooks much better in a super hot oven. to cool of an oven and it melts to much.

ah, so perhaps i tore it into too small of pieces, larger pieces won't melt so fast? and I should dry it a bit I see.
