Help me make pizza better!!!
« on: September 09, 2011, 11:11:35 PM »
Hi everyone!!  bigboybrent here.  You can call me B3, bigboy, brent, BBB etc....
I live in Portland, OR

I would have to say that Pizza is my second favorite food in the world!
(I'm asian so rice would be number 1  :P)

My family loves to go to different pizza places and enjoy pizza for the sake of great food!
I mean it is the perfect food.  You have your dairy, your vegetable(maybe fruit) fat, protein, carbs. etc....!!!

Lately, its been getting rough eating out all the time so we have limited our going out and started eating at home.
That has led me here. I want to make awesome pizza! My wife won't let me build or purchase a pizza oven, so at the moment
I have to settle for our home oven.

I have been making pizza and learned some basics from youtube.  I know that's not enough and want to learn more
Please don't hesitate on directing me where to start first.

see you in the forums!

Welcome to the forum!

Let's see...B3 sounds too much like a Vitamin, Bigboy...nah, you're already an adult I assume since you're married, BBB reminds of the Better Business Bureau so I will just call you Brent, if that's okay?  ;D

I am sure if you stick around and improve your pizza making skills your wife would have to cave in at some point to further advance your talents.

First off, what kind of equipment (oven, stone, etc), pizza tools (peels, screens, pans, etc) and ingredients (flour, yeast, sauce, cheese) do you use and what type of pizza have you set your sights on?

Hi Mike!!

Lets see, I use a regular home oven, a flat baking sheet, and... well that's about it.
For flour I've tried Gold Medal or Pillsbury all purpose flour.  I found a place in town that sells 00 flour.  Have not used it yet
Yeast I grabbed some instant yeast at the supermarket
Cheese I got some super market mozzarella, romano, ricotta.  In the future I would like to make my own fresh mozzarella

For sauce, I have no clue.  I tried just blending fresh tomatoes(didn't take off the skin and it tasted bland)  Got the idea from
Tyler's Ultimate pizza

I've also tried making Alton brown's red sauce.  I liked it but it was a bit sweet.  My family said the same

My family's favorite pizza is a Margarita Pizza
I also would like to make a white pie.  The best I've ever tried is Apizza scholls New York white pie
Mozzarella (whole milk & fresh), pecorino romano/grana padano, ricotta, lots of fresh garlic, herbs, black pepper, extra virgin olive oil
However, I can't recreate it at home :(

Thanks for the warm welcome!
