Get Yourself a Digital Scale for weighing flour and water

My wife got me a digital scale for Father's Day (after many hints)!

I just made some pizza dough with PFT's RAQUEL recipe as I have been doing for 3 months. The digital scale exposed the fact that I was "packing too much flour."  After carefully weighng the ingredients I had a quarter cup if flour left over (that I normally would have added to the mix).

I know there are those who say they add flour by feel and look, but for those who are just beginning, we do not know how the dough should feel!

The scale was only $35.  And well worth it!!

I use my scale all of the time and find that it is much easier to track changes when developing a recipe.  When I try a new recipe I will assign a weight to the flour based on the source of the recipe but most of the time I use 5 oz of flour per cup as a starting point.
My pizzas have become much more consistant since going to a scale.
