Tell me about it. I've only seen 3 but I know there are a few more. It's supposed to get easier but they are only giving out limited permits for now to see if things pick up. Plus there are no commissary kitchens for rent around here so I have no clue where they would be keeping their supplies. They have to have friends in the restaurant business so they can use their kitchens.

Chicago sucks for them right now and shared kitchens are becoming hard to operate!   I'm looking for one to use with good ovens but they seem to be dropping like flies!

BrickStoneOven, I've looked into this in MA, and there are a couple of options.  Church kitchens are one, there's also some type of kitchen in Jamaica Plain that food trucks are using.  PM me if you want to talk more about this.

I found one that was in JP but I read that it was closed.

Gotcha.  I just remember talking with them after reading an article a few months back.  Seemed like they were thriving.

I dunno, back in my flight school days, I tried to envision a way to operate a lunch-truck out of a helicopter.  I never quite figured out who the customer-base would be, or how to overcome the high operating costs of the machine.  It was entertaining to think about, tho.
