Hi everyone,

Been sucked into this forum after having moved to an area where literally no good pizza is sold.

So last few months I have been exercising my friday night pie, using NY and Neapolitan style recipes.

My current limitations are no mixer, so I hand mix and heat. I use a cheap countertop that gets 250c degrees.

I've finally settled on uncooked sauce > cooked sauce.

Regarding storage,
Uncooked sauce, with spices and garlic. How long can it be stored in the fridge ?

Congratulations, Schmohawk on your wise choice to go with uncooked sauce :)

I've seen quite a few people store their tomato sauce for longer than week, but, for me, I would never use it past 5 days. I would say that if you know you're going to use it past 4 days, I'd freeze it.  It freezes pretty well, even if you have fresh basil in it.
