electric commercial oven help

hi all
 my stove is like this one here,
http://www.cechk.com/products/715/(single deck stone all on the inside 3 phase power-no instructions)
if i do the n.y style thin crust how many minutes and at what temp?
also there are 2 temp controllers , one for top and one for bottom, shall i set them the same?, the whole time
