I had been wanting to do some sort of a desert pizza for a while now, so this is what I came up with. Deep fried dough topped, dusted with sugar, topped with a little cream cheese and a blueberry reduction. I made a dough specificly for this, as stated below:
8 oz of bread flour
60% hydration
1 TBS sugar
1 TBS oil
1 tsp. salt
1/4 tsp IDY
I combined the sugar and salt with the water, then tossed everything into the mixer and kneaded for about ten minutes, then let the dough rise in the fridge for about 20 hours.
I deep fried the dough in canola oil for about 3 minutes total. The blueberry reduction was made from a half a pint of frozen blueberrys placed in a sauce pan. Half a lemon was squeezed over to help break down the berrys. I mixed in a TBS of sugar and a TBS of Flour to help thicken it up then cooked over medium heat for about 5 minutes.
It was quite tasty, but the key is to eat it pretty soon after it is done. I made one for a party the next day where it sat out for a couple hours before being eaten, and it didn't taste nearly as good.
