Dough end crusts tough
« on: March 07, 2016, 06:52:27 PM »
I made three dough balls from one batch. The first pizza out the b.s was tough on the end crusts, second better and the third was real good.

Does throwing the pizza on to soon make a tougher end crust? The rest of the dough was fine on the first two. I know I didn't let the oven heat up enough for the first pie.

Thanks

Yes, not enough heat to get the dough to spring up will cause that.  I'm guilty of doing the same thing not letting my stone heat all the way and the pizza crust suffers.

Thanks. I figured because my last pizza is always the best one.
