As for the flour what are your oven temps running at? why not Caputo ? or at least a portion? Hard to comment without a single pie pic  :'(

I haven't used Caputo simply because I haven't bought any. So far, the flour has been FREE!! I know I can get some flour that the supplier says they have a bag which says Caputo, but that's as much as I could find out.. about $35 for 25kg bag.

As you know, its hard to stop and takes pics, and others aren't as concerned with the type of pics I/we want. We sliced them up for better distribution, but the pieces all sagged, and I'd rather have a piece that stands out proud when picked up.

Any specific changes I should be making using 00 flour? I'll be doing a 60% water recipe with at least a 30 minute autolyse. I don't recall seeing/reading any specific changes for 00 flour.

100% Tipo 00 flour
60% water
2% salt
.5% yeast
