Hi, my name is Alex. I'm an ex-pat living in Taiwan. I have been working in the pizza business back in the states for sometime and now that I am out here I am missing good pizza. I'm not sure what exactly is wrong with the pizza here (I think it might be the cheese.) but I want to fill the void. I'm currently working on putting together a little pizza by the slice operation at a local night market to see how it goes. I hope this forum will be able to help me when I get into some jams as my dough making ability is a little sub par.
