Smaller Pan

I would like to find a small deep dish pan for experimental purposes--anyone know where I can buy a 6" or so pan? I looked at bed, bath, and beyond, etc. with no luck. Sur La Table will have one at the end of September.

I'm not sure whether pizzatools is selling to non-business customers, but I have ordered from them before and have several of their pans and they are of very high quality. You might also look into whether a restaurant supply house near you stocks a deep-dish pan in the 6-inch size. Sometimes eBay has them, but I didn't see any 6-inch this morning when I did a quick search.

Hey Buzz,

Commercial bakeries swear by pans called Magic Line from Parrish,  they specialize in cake pans.  They are super duty aluminized steel pans.  Like the kind you find at williams sonoma.  I don't think they sell a coated pan thou. 

They sell in sizes ranging from 6x2 all the way up to 18x3.

Just out of a sick and twisted curiousity, does anyone know the bake time on a 18inch, 3inch deep deep dish pizza.

I have one of those 6" pans from abestkitchen. It works great for making a "personal" deep dish.
