Yesterday I went to When Pigs Fly in Kittery ME. I thought their pizzas were very good. I especially enjoyed their topping combination on the asparagus pizza, sauteed onions, artichoke hearts, asparagus, and spinach.
As you can see the pies had nice char and the crust had a very crisp shell with a soft airy crumb.
I spoke with one of the people manning the oven and he said that they cook in about 2 minutes and that the oven was about 750 degrees.
I didn't see any flour but I did see that they had some dough trays in the fridge as well as some out to use.
I agree with widespreadpizza if you are in the area it is worth having.
