Hi. I'm new here so wanted to ask you all which flour(s) you like best for Neopolitain pizza. I used Caputo 00 for it last week and it came out great. I've watched a few videos on youtube of some Italian guys from New York making Neo though and seen other types; Bruno De Fabio for instance was using Pillsbury High Gluten. Sorry I didn't use the polling method for this but I don't know enough flours to populate the five choices, only that high gluten is the key but it seems to be key in all types of pizza dough. As an aside, I also had great results with Caputo 00 in sourdough. Anyway, thanks in advance.
