Since I liked Steveís method of baking the Reinhart Neo-Neapolitan dough ball in a pan so much, I decided to also give it a try.  I didnít know what amount of salt, honey, or oil Steve used, so I just made up my own formula, from a post of Peterís, using ADY and honey.  I also used KASL and Caputo Pizzeria flour 50/50 in the formula. My hydration wasnít as high as Peter posted the formula for, but I did add more water than the 67% hydration called for. I donít know how my dough ball will turn out Tuesday baked in a pan, but this is the formula and method of mixing I used, in case anyone is interested.

If anyone wants to know what the percent for the other ingredients Steve used for his Reinhart Neo-Neapolitan dough ball he baked in the pan, he gave that information to me today.  This is what Steve said.

For my Reinhart dough, I used 4% olive oil, 1.8% sugar (no honey) and 2% kosher salt.

Steveís idea of baking a Reinhart Neo-Neapolitan made in a pan worked well for me too.  ;D This was the lightest crumb I achieved since the one Pizzarium pie I made awhile ago, and this was a lot easier.  The crumb was really different than other pies I have made and the slice just melted in my mouth.   

My dough sat out at room temperature for 3 hrs., then after the dough was pressed into the pan the dough was brushed with garlic herb infused olive oil and covered with a line cloth and proofed for 5 hrs.  I used my 12Ē steel pan to bake this pie.
