very corn meal crust
« on: July 19, 2005, 01:11:12 AM »
This is a slice from a shop in SF called LittleStar Pizza. It has been getting rave reviews from the locals so I thought I would give it a go.

The crust was quite crispy. They definitely used quite a bit of oil in their recipe, butter also. Here is what Ed levine had to say about this pie:

"This is head and shoulders above Zachary's," Levine proclaimed, snapping into the    buttery, crisp crust.

This is the Chicago crust we were looking for, made with a blend of vegetable oil, butter and olive oil.

Of Zachary's (which I believe is much closer to buzz's Giordano's recipe) he said:

"Taste this crust,It tastes like a dinner roll."

I have never had a 'real' Chicago pizza, but I far prefer the biscuit-like crust of Zachary's in Oakland to this one.

Does this look like any of the other popular crusts from Chicago.

To me, there seemed to be so much corn meal in this crust. It really tastes good, but I would rather have the biscuit-y dough.

I don't like the cornmeal, either--but that looks like a nice pie!
