extra virgin olive oil not advised??

On the Lehman pizza dough calculation site it states to not use extra virgin OO if oil is used in a recipe. I have heard this from other sources but have no idea why.
Any thoughts?

The Lehmann Pizza Dough Calculator is for working with Lehmann Pizza Dough, which happens to be NY style. NY style benefits from a more neutrally flavored oil in the crust. EVOO is too overpowering for this application.

I agree with scott123. The Lehmann NY style dough recipe is a commercial one. You can read some of Tom's comments on olive oil at the PMQ Think Tank at
