Many of you seem quite enthusiastic about 6-in-1 brand tomatoes. I've just ordered a six-pack of 28 oz. cans from (
www.escalon.net) and am looking forward to seeing what difference they will make in my pizza sauces. Thanks for the tip!
Escalon's site also offers several pizza sauce recipes using their products. Although recipes are geared to commercial volumes (5 gallons +), they can be scaled down for use by pizza aficionados.
I normally use domestically grown San Marzano Crushed Tomatoes (distributed by Simpson Imports, Ltd., New Milford, NJ 07646). These are available at my local (Raleigh, NC) Harris Teeter and Whole Foods stores for about $1.99 per 28 oz. can. They make an excellent tomato base for pizza sauce.
Imported Cento (which the owner of an Italian market made a point of telling me was pronounced: "chin-toe") brand San Marzano tomatoes are also available for around $2.79 per 28 oz. can from the above mentioned stores.
I'm looking forward to experimenting with 6-in1.
