mixing formula for 00 flour

Wanting  to mix a 55lb bag of 00 flouris  need a breakdown of ingredients and proper mix.  Did the date first batch and didn't turn out rite it was like playdo

What recipe /formula did you use?
did you try the dough tools on the forum?
click logo above and then dough tools also scour the Neapolitan board thats what style Caputo flour  is best for
