Sounds good, Eric  :) By the way, if you're committed to doing the best possible NY style pies (and, from your favorite places, it sounds that way), I recommend getting the largest square plate your oven can fit, so you can do larger pies and have the biggest possible target for launching onto.  Since most ovens are wider than they are deep, then that means a plate that goes from the back wall and almost touches the door, with room on the sides for air flow.  Measure it carefully, so it's close to the door, but the door still closes.
