flour 1614.68 g

water 1001.1g(62%)

salt 24.22g

ady 1/2 teaspoon

mix about 3/4 of flour in the room temp water until combined about one minute

let rest for 20 min.

add bloomed ady then mix for ten minutes. first 4 minutes mix without adding flour then add the rest of flour to desired consistency.

let rest for 20 minutes before balling then fridge for one to four days.

bake temp was about 720 at the stone but the bottom was not browning in the pan that good so i took it out of the pan for about a minute. total time was about 6 minutes.

dough ball size is about 600 grams and is pressed in a well oiled pan.
