I just got the call! I get a chance to help I guy I know develop a recipe for a deep dish crust and maybe a New York style crust for his pizza place. For obvious reasons if he goes with any of them I won’t be able to share the final recipes but I at least wanted to share the news and maybe some results as they happen.

DKM, you probably know this already but remember to take meticulous notes. Never trust your memory. Use a good scale. Assume nothing. Measure the dough temperature at the end of kneading for consistent results.
