Sourdo Ischia Starter Question

So I purchased the Italian starters about 6 months ago. When I bought the starters, I only activated the Neapolitan starter and not the Ischia one.

Does anyone think there should be a problem if I now activated the Ischia culture? It has been stored in its original packaging in my fridge at 38 degrees.

They are both from Naples - or at least that general area. Of the two, I prefer the Ischia. You should have no problem activating it.

Thanks Craig. I just wasn't sure and I wanted to try out the Ischia culture b/c it seems like everyone here has been having some success with it.
