January 2012 Monthly Challenge: "Mushrooms"

Your challenge is to bake a pizza this month based on your interpretation of the theme: Mushrooms.

Throwing some fungi on top of any old pie is OK, but let's start the new year by ratcheting up the creativity with something new.

To get the [dough] ball rolling, here is my entry. It is new for me because it is the first time I haven't precooked the mushrooms. In this case, the mushrooms are sliced paper-thin on a mandolin. They cook quickly, there is little moisture released, and the fragrance is captured by the upper crust. I made three of these focaccia di Recco today for a light lunch:

1) cheese and mushrooms
2) cheese, meatballs, and mushrooms
3) cheese, salami, and mushrooms

Paper thin dough, 24-hour room temp fermentation, rolled by hand. Perfect way to start the New Year.

Corn fungi pizza with sliced tomato and onion. One of my favorites. I have realized my oven loading at 800 plus degrees technique needs work. I'm not getting the round look I could get before.

Beautiful Don... But a little unfair. How am I supposed to gain access to Huitlacoche in New Hampshire?!? Nice start to the challenge.  I'm still brainstorming, and I think I'll be able to post pics instead of links from now on.

Thanks everyone ! I saw some oyster mushrooms at the store to day and just had to bring them home. A pizza tonight and stir fry tomarrow night. I went through my pantry and found a can of coconut milk.  ;D  Two hour dough. oh well.
1C. coconut milk
1/4C Hoisin sauce
2T. oyster sauce
1T. smooth peanut butter
1T. Rooster brand hot chili sauce
4 cloves garlic finely chopped
1t. ginger finely shredded
1t. cornstarch
Method:
Blend cornstarch with a couple of tablespoons of coconut milk. Heat all ingredients in a pan until simmered for 15 minutes stirring from time to time. Do not allow to boil. Upon cooling it will thicken up. A light coat of sauce, light on cheese, sliced green onion and slivered basil. Sublime.

Tennis racket with four different roasted mushrooms. The handle had ricotta, cooked ham, and olive oil inside. Topped with chives, pecorino and drizzled with truffle oil.

This shape is made by Pizzeria Starita in Naples.

After seeing Don's beautiful Oyster Mushroom Pizza, and John's amazing "Tennis Racket Pie", I'm almost embarrassed to post!

I went for a Stromboli:

- Mushroom duxelles (mushrooms, shallots, fresh thyme, garlic, white pepper, butter, olive oil, and a splash of dry Marsala)
- Applewood Smoked Ham (Niman Ranch. Good Stuff.)
- A bit of grated Fontina
- A dollop of Crème fraîche on the side
- A glass of dry Gewürztraminer.....
