The shot with all of the margheritas is simply breathtaking. The consistency and level of execution in the pies is beyond what most NP pizzerias produce. I am still in awe of your accomplishments Craig. Congrats to you and Kelly for such an engaging article. And just wait - the business offers may be rolling in at a rapid pace!

Craig and Kelly,

Very nice article. I think that that leaves only Norma and me among the forum's pizza obsessives and pizza obsessives-in-waiting who do not have WFOs :-D. I hope we won't be the last.

Thanks Kelly and Craig.  One thing that I thing is so important/ impressive about Craig is his willingness to share.  He has always answered questions forthright, without "leaving" stuff out, or the likes of false pride.

Not that any one else doesn't share, it is just another notch in his belt that he chooses to have.  Not that the Acunto notch wasn't enough. :-D

A bit late, but nonetheless: Great article to summarize the development and achievements of Craig !
A truly inspiring article.

@Craig: how is the middle of your pie ? Do you like it soft or does it still have a crisp veneer ?
Awesome work ! when your restauant will be open (not if) i will surely drop by when visiting Houston again.

Cheers

Congratulation on this article Craig. I just feel as fortunate to have seen your writings and pictures on PM for the past year or so and thanks for your time answering my questions. Your comments definitely help me become better at doing pizza in the WFO, something that my whole family is enjoying. This just shows that there are a lot of Obsessive Pizza Making Maniacs (new acronym OPMM :-D) around the world.

Thank You!
