Reinhart' Neo-Neapolitan Pie size

Is there a Pie chart that tells you how much raw flour and or how much ready to use dough equals what size NY Pie example 11" or 12 " etc. Thanks I would appreciate.

To be honest new at this just starting a lot i don't understand I,m assuming 11 oz  of Reinhart' Neo-Neapolitan dough should be around a 12" Pie that's what chart  I am looking for.

I must be a good stretcher. I can get way more than 12" out of an 11 ounce ball.
