I've only used Hobart 20 qt and Berkel VCM 40s. I want the quality of the Hobart, but not the price. Also, their 60 qt has a 2hp motor, and others seem to have 3-4 hp motors. I believe someone on here mentioned that Hobart's 60 qt was kinda weak.
What are some good brands to look for? I keep reading about spiral and fork (I assume the spiral is the one where the bowl spins), but can those really make a good stiff pizza dough?
Oh, and does a 3-phase mixer work any stronger than a single-phase? I'd prefer to stay single-phase. I know they make converters to allow 3-phase off single-phase but last I'd heard, they don't work so well. Does anyone have experience with this?
