I'm Shaun from California and I'm opening a pizza restaurant in China. I worked in American pizzerias for 10 years, about half as management. I've been running my bar in China since moving here 4 years ago on a whim. Looking for the perfect recipe to make a good medium-thick crust in a conveyor oven that's as crispy as possible and maybe uses a bit of cornmeal. Any help you can provide would be much appreciated!
