Just ran across this....notice the par bake.  Cheese is suddenly melted in the video and she continues making the pizza.  Also, when she first touches the dough in the pan - it moves to the side like it would after a pan rise....

interesting....

POINT OF CLARIFICATION:
The pizza from Uno's Chicago Grill is NOT the same as pizza from the original Pizzeria Uno.
Both are owned by the same company, but the methods for making pizza vary greatly.

In viewing that video, that is an awful (as in "terrible") looking Chicago Style deep dish pizza IMO from the Uno's Chicago Grill.  While Ed says the original and the disreputed Uno's Chicago Grill are owned by the same company, my understanding is that there is a complicated business relationship between the Sewell family and the Boston Uno corporation with a legal obligation to serve a different recipe for pizza at the two original Uno's restaurants near downtown Chicago. 

I noticed NO parbaking at all in the video and know that the original Uno's never did so.  Further it appeared that this disreputed Uno's Chicago Grill used shredded cheese, which original Uno's and Due's never, ever used.  Slices only -- as has been shown on many, many TV shows.  And never, never, never (let me know if I forgot a "never") would original Uno's and Due's or ANY of the classic Chicago Style deep dish pizzerias cook their great style pizzas in an inferior "conveyor" oven.  Conveyor ovens are made for Pizza Hut, Domino's, Papa John's, Hungry Howie's and the zillion mass produced fast food pizzerias and not quality Chicago Style deep dish.

Of the hundreds of times that I ate dinner at the original Uno's and Due's while going to school at nearby Loyola University, they would never serve a pizza with such a fat lipped rim that is commonly served at the Uno's Chicago Grill chain as was shown on that video.  Indeed, if you've seen the video of the Uno's vs. Malnati's TV show, you would have seen the Uno's manager tightly pressing and crimping the edge of their pizza up the sides of the pan to assure a thin edge and no "fat rimmed pizza" resulted! ! !  My opinion only, if one is interested in trying real Chicago Style deep dish pizza, Uno's Chicago Grill is not the place.  Go to the original Uno's or Due's across the street from Medina Temple in Chicago.

The par bake is hard to see because it goes by so fast.  Right after she places the shred cheese on, the very next shot shows toppings.  Notice how the cheese is melted and the very edge of the crust is brown while she is putting on the toppings....
at 1:02 the Cheese is melted, at 1:06 you can see the crust browned on the edge left hand side and crust pulled from the edge.

I'm not sure on the relationships, just thought is was interesting as the Uno's grills are very popular....I thought about par baking my Chicago Pan styles but never tried it.....but will....

They would not make my favorite list and no classic Chicago Style deep dish pizzeria that I know of parbakes their crust.  And I can't imagine parbaking a crust with shredded mozzarella in it.  But its good that you shared such with us as it reinforces many of our thoughts and feelings regarding that particular business.  They took a good name of a great, great Chicago deep dish pizzeria in my estimation and virtually destroyed the brand.

Sorry, BBH.  Hope I didn't come across too strong.  Unfortunately with my pizza eating experience for many years at the original Uno's and Due's, with what the Boston corporation has done to the brand, you'll find many of us upset with.  But life goes on.
