Your Ray's Famous Pesto and Fresh Mozzarella Pizza looks very tasty.   :D

I have some of the same Kirkland Basil Pesto and might give your dressings a try.  How did the pizza taste with that much basil pesto added?

I thought the pizza tasted great, but I will definitely cut back on the fresh minced garlic and the red pepper flakes because it made the pizza very spicy. Also, I did not use all the Pesto that is pictured in the bowl. I used the bowl to stir up the Pesto so that it would spread easier on the pizza. The actual recipe calls for a 1/3 cup of Pesto for a 12" pizza. I am sure that I used more than that on my 14" pizza, but I love Basil.  At first, I was concerned that I had too much Fresh Mozzarella, but it melted just fine. Give this pizza a try. I think you will like it for a variety on your menu. Best to you.

Thanks for telling me how much Basil Pesto you used.  Good to hear you love Basil.  ;D  I do too.  I tried one pizza with the same Basil Pesto and added olive oil to the Basil Pesto, before I applied it to the pizza.  I thought the Basil Pesto on the pizza was really good, but I did not use as much as you used.   Will try again after your post.

Spaten Oktoberfest

Got an invite to a party this weekend and so i made dough tonight with Spaten Oktoberfest Beer. This beer had a good flavor and kind of a Malt / Hops taste. I am sure it will be great dough.

Langostino Lobster Tails Pizza (Wild Caught)

I have always wanted to try this. So, I bought these at Costco and they are Wild Caught Langostino Lobter Tails that have been fully cooked, Peeled, and ready to eat.  (Of course they are Frozen). I might try it with Tomato sauce, but for now, I used an Alfredo Sauce that i also purchased at Costco. An expensive pizza to make, but really great tasting.

I used the items in the picture to make this pizza, However, after reading the ingredients in the Alfredo Sauce, I choose not to use the Parmesan Cheese, since it was the second ingredient in the Alfredo Sauce.

The dough was made with Spaten Oktoberfest Beer.  It pressed out very nice.

I heated the Alfredo Sauce in a smaller bowl so that I could spread the sauce  easier. Then,  I spread it over the pizza dough.

Then added the Langastino Lobster Tails. I made sure that they were place flat on the pizza so that they could be covered easier by cheese.

I was wondering what the pizza would be like if I did used same above ingredients, but replaced the Alfredo with my Red Pizza sauce? Can Langostino Lobster Tails work in a Red Sauce instead of a White/Alfredo sauce or am I wasting precious sea food? I would appreciate any feedback. Thanks.

Visited a small independent Micro Brewery in town.  It was fun to watch them brewing beer, so i thought I would try some in my pizza dough.

I purchased a Hefeweizen from them that was clearer than most Hefeweizens that i have tried. But the Brew master explained that it didn't have to be cloudy to be a good Hefeweizen.

I made a total of six dough balls that I gave a two day cold rise in the fridge. I then packed in in a cooler, on ice, for a 3 hour trip to a friend's house for making pizza. This worked out very well. Ice in the cooler, covered by a piece of cardboard, set the dough balls on top of the cardboard, then seal the cooler. It traveled very well.

The dough made with the Local Brewers Hefeweizen pressed out very nicely and made a great tasting pizza.  This beer was on tap only.

JD,

I hope the word Micro Brewery is the correct way to describe this place. ??? It has beer for sale by the growler and personal brewing stations. With all the beers that I have used and posted on this thread,  I wanted to make sure that people didn't pass up some of the small breweries that are right in their own neighborhood, just because they are not well known. There are many of them out there that make some fantastic beers which can be used for dough making as well.
