Mobile WFO Viability/Profitability

I know profitability varies with location, business model, marketing strategy, ingredients cost, size of operation, and loads of other factors.

That said, I am interested in hearing from owners of commercial mobile WFOs about the size of their operation and its profitability.

How many pizzas do you sell per year?
How many people do you employ?
What are your overhead (fixed) costs?
What are your variable costs?
What is your profit margin?

I'm am also interested in general thoughts on mobile WFO profitability. Thanks in advance for sharing openly.
