February 2012 Monthly Challenge: "Not Round"

This month's challenge is inspired by the brilliant quattro funghi racchetta. that dellavecchia submitted for last month's challenge. Make a new pizza this month in a unique shape with some kind of purpose in mind (aesthetic, functional, culinary, military, etc.)

Didn't turn out as pointy as I wanted but I got the topping right. Pig skin or here in Mexico chicharrónes. Pork rinds, I crack myself up :-D

I borrowed from my German background for this pizza tart. I thought maybe some folks would spot it's heritage. Speckzelten (speckplatz) was a tradition in my house growing up. I know my mom and grandmother didn't use a homemade BBQ sauce and Manchego cheese in theirs but I think they might have liked it.

Lol Norma, I knew you would do a heart shape pizza.  :-D looks great! Another funny thing, my local supermarket stocked up on heart shaped pans, today there was not a single one on the shelf.

How did you know I would do a heart shaped pizza.  :P Thanks for saying the heart shaped pizza looks great. That is funny that your local supermarket ran out of heart shaped pans.  I guess everyone is getting ready for Valentine’s Day.

I've been wanting to do a pan pizza for a while, so I'll use the monthly challenge as an excuse to eat a rectangle.
This is the Sullivan Street Funghi Pizza - really easy dough to make, and nice crispy (and oily) bottom. Altered the classic pie by substituting tarragon for fresh thyme. Cremini, onion, salt, and red pepper flakes. Good all the same.
Lots of <3 February!!

Roasted zucchini, yellow squash and shallots, with aleppo chili flakes. Finished with Paranno cheese

Flour (100%):    867.51 g  |  30.6 oz | 1.91 lbs
Water (70%):    607.26 g  |  21.42 oz | 1.34 lbs
CY (.3%):    2.6 g | 0.09 oz | 0.01 lbs |
Salt (2.5%):    21.69 g | 0.77 oz | 0.05 lbs | 3.89 tsp | 1.3 tbsp
Oil (4%):    34.7 g | 1.22 oz | 0.08 lbs | 7.71 tsp | 2.57 tbsp
Total (176.8%):   1533.76 g | 54.1 oz | 3.38 lbs | TF = 0.1326
Single Ball:   766.88 g | 27.05 oz | 1.69 lbs

Mixed for 8 minutes. 3 hour counter rest, covered.
24hr bulk rise @54F, Divided and 12hr ball rise @54F. Used a wine cellar cooler.
2hr Room Temp, the press into pan. 2hr pan rise, topped and 1 more hour pan rise.
Baked @ 425F

Light, crispy crust. People were drooling over this one.

The idea goes to Norma. (thanks V. day was a success.) I only copied because it was such a good idea.  Just getting the pic up now but it was a gift for the wife. 

Also, it was an experiment between Bel Gioioso and Galbani cheese.  The cheese closest to you in the pic is Balbani and further away was Bel Gioioso. 

side note on the cheese: I prefer the Bel gioioso in texture  before being melted but on a pizza the Galbani cooks up better in my opinion.

These two pies are my second submission for “Not Round”.  These are fried pizzas that the dough was fried first, then dressed and finished in the oven.  The dressings for these fried pizzas were Les’ sweet sauce, two blends of mozzarella, a little white cheddar, Capicolla, sausage, homemade ricotta, and lastly sprinkled with thyme and stick oregano from Larry.
