Name is Evan, been in pizza biz for 10 yrs....about to start my own pizza place and THOUGHT i knew a little about it until i came across this forum, now i am going to try to soak in as much as i can from this place and am definitely glad i found it BEFORE i started my pizza venture.  First I would like to ask if anyone has any info. on a book that can get me to the basics of knowing the fundamentals of pizza dough. Any replies would me much appreciated and i look forward to getting to know you. Thanks!

Welcome to the forum, Evan, as far as I know, there is no good book on NY style pizzamaking.  Not only is there no good book, but the ones that are out there are chock full of disinformation (like American Pie) and are to be avoided at all costs.
