My sunday tomato pie....

.....i've been enjoying Peter Reinhart's Pizza Quest lately ..and this week i decided to go right at Tony Gemignani's Original Tomato pie ...ala my home gas oven/550d ...bottom stone 5min/screen and 2min/directly on a top stone 3" under the broiler flame ...7.5/8min total cook time ...KASL 19hr cold ferment ..5hr counter time ...Calabro's WholeMilk Mozz/wholefoods ..Famoso DOP sanmarz tomatos handcrushed/drained/wholefoods ...crumbled italian sweet sausage ..uncured pepperoni ...grated parm/romano ...oregano........

Nice!  Though it sounds more like "Meat Lovers Pie" ;D

thanks folks....it was tasty ...amazing how the "salty" of the pepperoni/sweet sausage is enough to brighten up and round off the straight crushed tomato ...good stuff =)
