Hi  from Minnesota
 Nice to find a site with so many people that share my obsession with pizza, I think more to the point my obsession with coming up with the perfect dough recipe for pizza.  As the User Name I chose implies,  I do cook pizza on a very hot pizza stone.  This seems to give me the best results and I have tried a few over the past three years.   I do use a very wet dough which goes right on the hot Stone for 3 minutes on one side then flip it for  2-3 minutes on the other (bottom) side.  Once I have done this I pull the pizza out of the oven onto a peel and put the toppings on,   then back in the oven for approx. 8 minutes to finish cooking.  I find the crust comes out nice and crisp on the outside and bubbly on the inside.  The family prefers a New York style pie!  I am currently working on a Starter for my dough to help the taste come through as the dough sits in the fridge through the fermentation process.  Will keep you updated on my progress
