Friday morning, planning on doing battle with the licensing office today, once again. :-[ It's just staggering what they have put me through. The new tank on the roof is plumbed and I got a day of seasoning the stones completed. Two more days and it's pizza time, so dough on Saturday and bake on Sunday. Tables and chairs should be delivered today, but I won't hold my breath.

I think I have one more trip to the county seat Monday to fill out the papers for the health deptartment and I will have my license. They looked at my paperwork and I did get signed off on everything except for the health paperwork. What an ordeal but I think it's just about over. Still no tables or chairs.............

Alejandra and I made a run into Puerto Vallarta today, a quick stop at Office Depot, then went to the restaurant supply house my dear baker friend told me about to purchase baking screens, server platters and other items on my list. Sadly, no large muffin baking pans for baking slider buns but I think I can modify what I did buy. A short distance from there I picked up plain generic pizza boxes and found some SAF brand IDY so it came back with us also. Returned to Bucerias, we were both famished so we had lunch and then it was dough making lesson time. It went ok, she'll get it quickly. Made up enough dough for ten, ten inchers for her to practice opening and baking on Sunday. Photos soon. I do have to get a photo of all the paperwork I've be required to produce.

Sometimes life just doesn't go as well as we would like, things happen that are beyond our control, this is one of those times. At this moment I just can't grasp the concept that I am so close to being able to open and then recieving the news my father passed away yesterday. I just don't know what more to say.

Sorry to hear about your father, Don. My dad is 86 and I always have it in the back of my mind that things could change quickly. Good luck with everything.
