Question about San Felice Farina di grano tenero tipo "00" flour.

Recently bought my first ever bag of "00" flour, the one named above. Wondering if anyone can give me specific about it, especially protein and hydration ratio information. It seems to be a very soft, fine grained flour, for my first use I mix in a little bread flour as I felt it needed a little extra "strength". Very nice flavor, want to learn more!

The San Felice is what they used at Antoco in Atlanta.  I agree, very good taste.
