Looks great did not know Salvatore (well at least have not heard of him) but what does he call it filetto?
Any significance other than name?
Well I am not a pizzaiolo if you know what I mean

Filetto di Pomodoro is the name given to fresh San Marzano cut in quarters lenghtwise.
