That's a commercial piece of equipment you have there, and very good looking.
Some of the Italian low dome ovens are very impressive (Ferrara, Acuno, and hopefully Ambrogi :], I'm surprised they don't have a larger presence in the US market.
The reason I went with the Ambrogi is because they are made to be transported, the dome is a high pressure refractory casting with a built in metal pallet and a metal support structure - it really is just the core of an oven, it has to be enclosed, outer arch built, and insulated to be functional.
Like I said, I've built Pompeii's but didn't want to reinvent the wheel with the low dome oven.
