What about the sauce and sausage?

I'm trying to make a Lou's pizza at home, and I've seen a bunch of advise for the crust . . . . . but what about the sauce? Even more, what about the italian sausage? Does anyone out there know the tricks to making a pizza that tastes exactly like Lou's(the best pizza in the nation)?

I watched a show that showed a Chicago joint (I don't think it was Lou's) putting RAW sausage on the pizza and that was simply disgusting to see.  I sure hoped they'd cook it at least part of the way and let some of the grease escape.
