Need help quickly - cheese emergency :-)

Hi all, I just flew into Florida for my Moms 90th B-day party, I'll be here for a few days and I wanted to make some pizza with her - Last week I sent a case of Jersey Fresh tomatoes from Amazon and today I stopped into the RD (with my KSBS card) - they had lots of cheese and I was hoping someone here could tell me what the best brand for NY style would be. See choices below...

I would really appreciate the help, it would be great to make some really good pies with my mom (she was born and raised in NY).

You have 3 choices.  the fratellio, supremo and saputo.  I haven't used any of them but would go with the  Saputo if it is a low moisture(it looks like it).  the fratellino says great value which means it probably isn't very good. The Italian supremo is not very good according to a NY native/pizzeria owner I know.   You want a whole milk, low moisture mozz.  Have fun and I am sure your mother will love the pies!  Walter

I'm a little late here but the Saputo Mozzeria isn't 100% mozzarella...it has modified food starch in it, which probably explains why it was only $2.14/lb when I bought some recently. That said, it's not bad but won't be as good as a 100% mozz cheese.

thanks for that info Seven!  I have never seen that cheese before and the print is too small to read anything on my computer.  I assumed it was a whole milk mozz.  I have not found any Mozz at the Columbus OH RD that I like.  Walter

The Mozzeria I bought is whole milk and seemed to melt well. I still have 4+ pounds left but have been eating it with sandwiches instead of on pizza. I think it's targeted for the "budget-minded" pizza operator. If I recall correctly, it was priced similarly to the RD house brand but the latter is 100% cheese and a better choice for pizza fanatics.

Thank you all, sounds like I may be better off buying a smaller amount at the local costco since these are really not that special, I'll post some pics once we make the pies, thanks again for the info, everyone on this board is great....
