Hi my name is John and I'm from walnut creek ca.  About 30 miles east of San Francisco.  I have an Italian restaurant/ pizzeria and we've been making new York style pizza for over 40 years. I love Napoletan style pizza and I'm planning on purchasing a new brick oven for my restaurant. Im more interested in gas ovens because of convenience.  I'm testing the valoriani verace next week and I'm hoping to find some advice on my quest for a new oven.  Thanks
